# Directions:

01 - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
02 - Cut sweet potatoes into ½-inch thick rounds, keeping slices uniform for even roasting.
03 - Toss rounds in olive oil and season with salt and pepper. Arrange in a single layer on the baking sheet without overlapping.
04 - Roast for 20–25 minutes, flipping halfway through, until edges are golden and crispy.
05 - Warm the honey slightly. Drizzle the roasted rounds with warm honey immediately after baking. Sprinkle crumbled feta, fresh thyme, and a pinch of red pepper flakes if using.
