Buttery Herb Boiled Potatoes (Print Version)

Soft baby potatoes tossed in butter and fresh herbs make a quick, flavorful side for any meal.

01 - 2-3 pounds yellow baby potatoes
02 - 4 tablespoons butter
03 - 1 tablespoon chopped fresh parsley
04 - 1 tablespoon minced chives
05 - 1 teaspoon minced fresh rosemary
06 - 1 teaspoon minced fresh thyme
07 - 1 teaspoon salt
08 - 1 teaspoon black pepper

# Directions:

01 - Wash the baby potatoes. If they are larger, slice them in half; if they are bite-sized, leave them whole.
02 - Bring a large pot of salted water to a boil. Add the potatoes and cook until they are fork-tender, about 14–18 minutes.
03 - Drain the potatoes and transfer them to a large mixing bowl. Immediately add the melted butter, parsley, chives, rosemary, thyme, salt, and black pepper. Toss until evenly coated.
04 - Taste and add additional salt if needed. Serve warm and enjoy.
