# What You Need:

01 - 2 large sweet potatoes
02 - 2 tablespoons olive oil, extra virgin recommended

05 - 1 teaspoon smoked paprika, omit if preferred

06 - 1 cup feta cheese, goat cheese can be substituted
07 - 2 tablespoons honey, maple syrup can be used

# How to Make It:

01 - Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
02 - Wash and peel the sweet potatoes, then slice them into uniform ½-inch thick rounds.
03 - In a large mixing bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika; toss to coat.
04 - Spread the sweet potato rounds in a single layer on the baking sheet.
05 - Roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
06 - Remove from the oven and let cool for about 5 minutes.
07 - Transfer sweet potato rounds to a serving platter. Sprinkle crumbled feta cheese over the warm rounds. Drizzle honey over the feta-topped sweet potato rounds. Garnish with freshly chopped parsley before serving.
