# Ingredients:

01 - 4 fresh or frozen cod fillets, thawed if frozen
02 - 2 tablespoons olive oil
03 - Juice of 1 lemon
04 - 3 cloves garlic, minced
05 - 1 teaspoon paprika
06 - 1 teaspoon dried oregano
07 - ½ teaspoon salt
08 - ¼ teaspoon black pepper

→ For the Mediterranean Topping

09 - 1 cup cherry tomatoes, halved
10 - ½ cup Kalamata olives, sliced
11 - ½ small red onion, thinly sliced
12 - 2 tablespoons capers
13 - ¼ cup fresh parsley or basil, chopped

# Directions:

01 - Preheat your oven to 400°F (200°C). Pat the cod fillets dry with paper towels to remove excess moisture.
02 - Place the cod fillets in a baking dish. Drizzle with olive oil and lemon juice. Sprinkle with garlic, paprika, oregano, salt, and pepper.
03 - Scatter cherry tomatoes, olives, red onion, and capers over the cod. Drizzle with a little extra olive oil for richness.
