# Ingredients:

01 - 8–10 slices bacon, cooked and chopped
02 - 1 tablespoon butter or olive oil
03 - 1 large onion, diced
04 - 2 large carrots, peeled and sliced
05 - 4 cups chicken broth
06 - 1–2 teaspoons salt
07 - 1 teaspoon black pepper
08 - 1 teaspoon garlic powder or 4 cloves minced garlic
09 - ¼ teaspoon dried thyme
10 - ½–1 teaspoon red chili flakes (optional)
11 - 16 ounces gnocchi
12 - 2 cups heavy cream or half-and-half
13 - 2 cups shredded cheddar cheese (medium or sharp)

# Directions:

01 - Cook bacon until crispy, then chop and set aside.
02 - In a large pot, heat butter or oil and sauté onions and carrots until tender.
03 - Add chicken broth and bring to a simmer.
04 - Stir in heavy cream, seasonings, and shredded cheese, stirring continuously.
05 - Add gnocchi and cook for 2 minutes or until soft.
06 - Stir in bacon, adjust seasoning, and serve hot.

01 - For a lighter version, use half-and-half instead of heavy cream.
