Zesty Marinated Tomatoes (Print Version)

Tangy marinated tomatoes with basil, olive oil, and balsamic. Refreshing as a side or topping.

# Ingredients:

01 - 4 cups fresh tomatoes, chopped (about 4 medium-sized)
02 - 1/4 cup extra virgin olive oil
03 - 2 tablespoons aged balsamic vinegar
04 - 1/4 cup fresh basil leaves, chopped
05 - 2 garlic cloves, minced
06 - 1 teaspoon sea salt
07 - 1/2 teaspoon freshly cracked black pepper

# Directions:

01 - Wash the tomatoes and cut them into bite-sized pieces.
02 - In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper until well combined.
03 - Add chopped basil to the sliced tomatoes and pour the marinade over them. Gently toss to coat.
04 - Cover with plastic wrap or transfer to an airtight container and refrigerate for at least one hour to allow the flavors to meld.
