5-Minute Watermelon Feta Salad (Print Version)

# Ingredients:

01 - 4 cups cubed seedless watermelon
02 - ¾ cup crumbled feta cheese
03 - ¼ cup fresh mint leaves, torn or chopped
04 - 1–2 tablespoons olive oil
05 - 1 tablespoon fresh lime or lemon juice
06 - Salt and black pepper to taste

08 - ½ cup arugula or baby spinach
09 - Balsamic glaze drizzle
10 - Chopped cucumber
11 - Toasted pine nuts or pumpkin seeds

# Directions:

01 - Cut watermelon into bite-sized chunks. Remove any seeds if needed and place cubes in a large mixing bowl.
02 - Sprinkle crumbled feta and chopped mint over the watermelon.
03 - In a small bowl, whisk together olive oil, lime or lemon juice, salt, and pepper.
04 - Drizzle the dressing over the salad and toss gently to combine without breaking up the watermelon or cheese.
05 - Serve immediately, or chill for 15–30 minutes to let the flavors meld.
06 - Just before serving, drizzle with balsamic glaze or top with extra mint for a polished finish.

# Notes:

01 - Use sweet, seedless watermelon for best results. Add feta and dressing just before serving to preserve freshness. Fresh mint gives the salad a cooling contrast—basil can also be used for variety. Serve chilled, and drizzle with balsamic glaze for added flavor and presentation.
