# Ingredients:

01 - 2 ¼ teaspoons active dry yeast
02 - ¾ cup warm water
03 - ¼ cup granulated sugar
04 - 2 large eggs
05 - ½ cup whole milk
06 - 3 tablespoons unsalted butter, melted
07 - 1 teaspoon vanilla extract
08 - 4 cups all-purpose flour
09 - Pinch of salt
10 - Oil for frying
11 - Powdered sugar for dusting

# Directions:

01 - Dissolve the yeast in warm water with a pinch of sugar. Let it sit for 5 minutes until frothy.
02 - In a large bowl, whisk together the sugar, eggs, milk, melted butter, and vanilla extract.
03 - Gradually add the flour and salt, stirring to form a dough. Knead until smooth.
04 - Let the dough rise in a warm place for 1-2 hours or until doubled in size.
05 - Roll out the dough on a floured surface to about ½-inch thickness. Cut into squares or circles.
06 - Heat oil in a deep fryer or pot to 350°F. Fry beignets until golden brown on both sides, about 2-3 minutes per side.
07 - Remove and drain on paper towels. Dust with powdered sugar before serving.
