In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste. Set aside.

In a separate bowl, toss together halved grape tomatoes, fresh mozzarella balls, and chopped basil. Season with salt and pepper to taste. Set aside.

Preheat the oven to 400°F (200°C).

Heat oil over medium-high heat in a large oven-safe skillet. Season both sides of the chicken with salt and pepper. Once the oil is hot and shimmering, add the chicken in a single layer. Cook for 1-2 minutes per side until lightly golden brown.

Add the prepared balsamic sauce mixture to the skillet. Simmer, scraping up any brown bits from the bottom of the pan with a wooden spoon. Remove the skillet from heat.

Top the chicken with the reserved tomato mozzarella mixture.

Transfer the skillet to the preheated oven and bake uncovered for 18-23 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Remove from the oven and let the chicken rest for 5 minutes before serving.
