Honey Chipotle Chicken Bowl (Print Version)

Tender chicken glazed in honey chipotle sauce, served atop rice with avocado, corn, and cherry tomatoes.

# Ingredients:

01 - 1 pound chicken thighs or breasts
02 - 2 chipotle peppers in adobo sauce
03 - 3 tablespoons honey
04 - 2 cups cooked rice (white or brown)
05 - 1 avocado, sliced
06 - 1 cup cherry tomatoes, halved
07 - 1 cup corn kernels
08 - Fresh cilantro for garnish

# Directions:

01 - Blend chipotle peppers, adobo sauce, honey, garlic, and a splash of lime juice until smooth. This sauce will act as a marinade and glaze, so balance sweetness and heat carefully.
02 - Marinate chicken in half of the prepared chipotle sauce for at least 20 minutes. Sear the chicken in a hot skillet until golden brown on both sides. Reduce heat and cook until fully done, brushing additional sauce onto the chicken as it cooks.
03 - Place a serving of cooked rice into a bowl. Top with sliced chicken, cherry tomatoes, corn, avocado slices, and optional toppings such as shredded cheese or sour cream.
04 - Sprinkle fresh cilantro and drizzle lime juice over the bowl. Add hot sauce or sliced jalapeƱos for extra spice if desired. Serve warm.
