01 - 1 lb ground turkey
02 - 2 large sweet potatoes, peeled and diced
03 - 1 tbsp olive oil

08 - 1/2 tsp ground cumin
09 - 1/2 tsp dried thyme
10 - Salt and pepper to taste
11 - 1 cup shredded mozzarella or cheddar cheese
12 - Fresh parsley or cilantro, chopped, for garnish (optional)

# Directions:

01 - Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
02 - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Drain any excess fat if necessary.
03 - Stir in the minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for an additional 3-5 minutes until the spices are fragrant and the veggies are lightly softened.
04 - Transfer the turkey and vegetable mixture to the prepared baking dish. Cover with foil and bake for 25 minutes, or until the sweet potatoes are tender.
05 - Remove the foil, sprinkle the shredded cheese evenly over the top, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
