Greek Roasted Garlic Spinach Pizza (Print Version)

A Mediterranean white pizza bursting with creamy cheeses, roasted garlic, and fresh spinach for a true flavor delight.

# Ingredients:

01 - 1 pre-made pizza crust (store-bought or homemade)
02 - 1 cup fresh spinach, chopped
03 - 1 medium head of garlic
04 - 2 tablespoons olive oil
05 - 1 cup ricotta cheese
06 - 1 cup mozzarella cheese, shredded
07 - 1/2 cup feta cheese, crumbled
08 - 1/4 cup grated Parmesan cheese
09 - 1 teaspoon dried oregano
10 - 1 teaspoon crushed red pepper flakes (optional)
11 - Fresh basil leaves for garnish
12 - Salt and pepper to taste

# Directions:

01 - Preheat your oven to 200°C. Slice off the top of the garlic head, drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and roast for 30-35 minutes until soft and caramelized. Cool slightly, then squeeze the garlic cloves into a bowl.
02 - In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the chopped spinach until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
03 - Mash the roasted garlic cloves in the bowl with a fork until smooth. Add the ricotta cheese, 1/2 cup of mozzarella cheese, dried oregano, and a pinch of salt and pepper. Mix until well combined.
04 - Spread the garlic-ricotta mixture evenly over the pizza crust. Layer the sautéed spinach, the remaining mozzarella cheese, and the crumbled feta. Optionally, sprinkle with crushed red pepper flakes.
05 - Place the pizza in the preheated oven and bake for 15-20 minutes, or until the crust is golden and the cheeses are bubbly and slightly browned.
06 - Let the pizza cool for a couple of minutes. Garnish with fresh basil leaves before slicing and serving.

01 - For an extra flavor boost, drizzle olive oil over the pizza before serving.
