# Ingredients:

01 - 1 cup all-purpose flour
02 - 1 teaspoon salt
03 - 1 teaspoon baking powder
04 - 2 tablespoons granulated sugar
05 - 1/2 teaspoon ground cinnamon
06 - 2 large eggs
07 - 1/3 cup milk
08 - 1 tablespoon melted unsalted butter
09 - 1 1/4 cups diced fresh peaches

10 - Granulated sugar for dredging or powdered sugar glaze
11 - Oil for frying

→ Powdered Sugar Glaze

12 - 1 cup powdered sugar
13 - Milk as needed for drizzling consistency

# Directions:

01 - Whisk together flour, salt, sugar, cinnamon, and baking powder in a large mixing bowl. Add eggs, milk, and melted butter, and whisk until smooth. Gently fold in diced peaches.
02 - Preheat oil in a fryer or deep frying pan to 375°F (190°C).
03 - Using a long-handled ladle, scoop 1/4 to 1/2 cup of batter into the hot oil. Allow fritters to cook for 2 to 3 minutes, or until golden brown and puffy, turning occasionally.
04 - Remove fritters from oil with long-handled tongs and place on paper towels or newspaper to drain. Dredge fritters in granulated sugar or glaze with powdered sugar mixture.
05 - Whisk powdered sugar and milk together in a small bowl until a drizzling consistency is achieved.
