Chicken Fajita Burrito Bowl (Print Version)

Spiced chicken, colorful peppers, beans, and rice come together for a vibrant Tex-Mex inspired meal bowl.

# Ingredients:

→ Protein & Seasonings

01 - 4 boneless skinless chicken thighs
02 - 2 tbsp fajita seasoning
03 - Salt and pepper, to taste

→ Cooking Oils

04 - 3 tbsp avocado oil

→ Vegetables

05 - 1 red bell pepper, sliced
06 - 1 yellow bell pepper, sliced
07 - 1 green bell pepper, sliced
08 - 1 medium sweet onion, sliced
09 - 1 lime, cut into wedges
10 - Fresh cilantro for garnish

→ Grains & Legumes

11 - 3-4 cups cooked rice
12 - 1 can black beans, rinsed and drained
13 - 1 cup corn kernels, fresh, canned, or frozen

→ Toppings

14 - ½ cup salsa
15 - ½ cup sour cream
16 - ½ cup shredded cheese, cheddar or Mexican blend
17 - 1 tbsp lemon juice (or vinegar)

# Directions:

01 - Coat chicken thighs with fajita seasoning, salt, and pepper.
02 - Heat 1 tablespoon avocado oil in a skillet over medium-high heat. Cook chicken thighs for 6-8 minutes per side until golden and cooked through. Remove, let rest, then slice into strips. In the same skillet, add another tablespoon of avocado oil and cook sliced bell peppers and onion until softened and slightly charred, about 5-7 minutes. Season lightly with salt and pepper.
03 - Add a splash of water to pre-cooked rice and reheat in the microwave or in a pan over low heat until warm and fluffy. Stir occasionally, seasoning with a pinch of salt and optional lime juice.
04 - Rinse and drain black beans, then season with a pinch of cumin or fajita seasoning and warm. In a separate pan, warm the corn with a pinch of salt.
05 - Start each bowl with a base of rice. Add sliced chicken, peppers and onions, black beans, corn, salsa, a dollop of sour cream, shredded cheese, and a lime wedge.
06 - Sprinkle with fresh cilantro. Add a squeeze of lime juice before serving. Adjust toppings to taste.

01 - Marinate the chicken with fajita seasoning for 30 minutes to an hour to enhance flavor.
02 - Add fajita seasoning to peppers and onions during cooking to tie flavors together.
03 - Prepare rice, beans, corn, and salsa ahead of time for easier assembly during the week.
04 - A squeeze of fresh lime brightens the dish and balances the richness of ingredients.
